Vegetable Stew

  1. Mixed Vegetables: 2 cups
  2. Onion: 1
  3. Tomato: 1 small
  4. Potato: 1
  5. Green Chilli: 2
  6. Ginger & garlic paste: ¼ tsp each
  7. Turmeric powder: ½ tsp
  8. Coconut Milk Powder: 3 tbsp
  9. Salt: needed
  10. Oil: 2tbsp
  11. Mustard seeds: ½ tsp
  12. Curry leaves: few
  13. Coriander leaves: 1 string
Method of Preparation:
·        In a pan add the mixed vegetables, chopped potato, onion, tomato, green chilli, ginger garlic paste, turmeric powder and salt.
·        Put on the stove and cook until the vegetables are cooked. (The gravy should be thick. If excess water is there put on high flame till the gravy comes thick.)
·        Then add the coconut milk powder, stir and switch off the flame.
·        Add chopped coriander leaves.
·        In pan heat oil, splutter mustard seeds, and then add curry leaves. Transfer this to the prepared stew.
·        Serve hot with Chappathi.
