Just try out this recipe; it is very simple but very delicious. Aroma of ginger makes it tastier.
Ingredients
Vellarikka/Cucumber: 350gms
Green Chilli: 2
Grated Coconut: ½ cup
Curd/ yogurt: ¾ -1 cup
Ginger: 1” piece
Dry red chilli: 2
Coconut oil: 2 tbsp
Mustard seeds: few
Curry leaves: few
Salt: needed
Method of Preparation
Cut cucumber into small pieces.
Add water, green chilli and salt to it
Keep on flame.
Meanwhile grind the coconut by adding curd and ginger.
When cucumber is cooked add the coconut mix to it.
Stir and switch off the flame. Should not bring to boil.
Heat oil in a pan; add dry red chilli, stir and take it out from oil and crush and keep aside.
In the same oil add mustard seeds, when it splutters, add curry leaves.
Transfer this to prepared cucumber curry. Now add the crushed red chilli to it.
Serve hot with rice..
