Baked Grapes Jam Cheese Cake



When a baked blueberry cheese cake was posted at Mélange, I was so irresistible and just made a slight twist to the recipe with my available ingredients and baked it the day itself. Her cake was so gorgeous looking cake, the upper crust of my cake browned, still i was happy with the end result.So here is my recipe.
Ingredients
Butter Cookies: 12
Butter melted: ½ cup
Cheese: 5tbsp
Sugar: ¼ cup
Eggs: 2
Vanilla Essence: ¾ tsp
Black Grapes Jam: 4tbsp (or as needed)

Method of Preparation
In a bowl take the butter cookies and crush with hand to make it a rough powder. (as it is butter cookies no need to blend it, just powder it with hand)
Then add butter to it and mix well with hand, if needed you can add some butter more.
Grease a spring form baking pan and add this biscuit mixture to it and press well with the hand and spread the black grapes jam over it. Place it in the freezer till you make the topping.
In a bowl add cheese, sugar, eggs and vanilla extract. Beat well with an electric beater till it comes creamy.
Pour this over the black grapes jam layer and bake in a preheated oven at 1600C to about 25-30 minutes or till done.

Note: My cake’s upper part became slightly browned as I kept at 1800C, but I feel it didn’t make any difference in taste, it was really super delicious.
