Chicken Stripes

Ingredients
Chicken breast piece: 250gms
Ginger paste: 1tbsp
Garlic paste: 1tsp
Chilli powder: 1tbsp
Salt: needed
Bread Crumps: needed
Maida: 2tbsp
Oil: for frying
Method of Preparation
Cut the breast piece length wise. (Like thin stripes)
In a bowl add chilli powder, ginger, garlic paste, maida and salt.
Add the chicken stripes to it and mix well.
Marinate to about 1 hour.
Heat oil in a pan and take each stripes, roll in bread crumps and deep fry in oil.
Serve hot.

Egg Pepper Fry



Ingredients
Hard Boiled Eggs: 3
Galic cloves: 5
Turmeric powder: ¼ tsp
Pepper powder: 2tbsp
Coriander powder: ½ tsp
Salt: a pinch
Garam Masala Powder: 1tsp
Fenugreek powder (freshly powdered): ¼ tsp
Curry leaves: few
Coconut Oil: 3tbsp
Method of Preparation
Split the hard boiled eggs into two and keep aside
In a nonstick pan add coconut oil; add crushed or finely chopped garlic pods.
Stir for a while and low the flame, add turmeric powder, coriander powder, pepper powder, garam masala powder, curry leaves and salt.
Stir and add 1 cup water.
When water boils add gravy becomes slight thick add the eggs, cut side down.
Don’t cover the pan, let the water reduce and after 2-3 minutes turn the eggs gently.
Switch off the flame when the masala coats well with the eggs. Add fennel powder and close with a lid for 2 minutes.
Serve with chappathi or rice.

Oats Cookies


Ingredients
Oats: ¼ cup
Wheat Flour: ¼ cup
Sugar: 5tbsp
Butter: 3tbsp
Pineapple Jam: 3tbsp (as per required)
Baking Powder: ¼ tsp
Method of Preparation
Grind oats into a fine powder. Powder the sugar.
In a bowl add oats powder, wheat flour, powdered sugar and baking powder.
Mix well with hand
Add butter to it.
Mix well with hand. Then add the jam to make smooth dough. (Do not add water or milk, make dough by adding jam)
Preheat the oven, Grease a baking tray.
Make small balls out of it, flatten it a little and arrange on a baking tray with 1” space in between.
Bake to about 15-18 minutes or till the upper parts slightly change the color. Remove from the oven, cool and serve.

Don’t over bake as the cookies will go hard. Bake only to the correct timing; take out when small cracks appear on the cookies. Even when we take it out from the oven after baking it will be smooth and soft, when cools it will come to the cookie consistency.

Pineapple Upside Down Cake


Ingredients
Topping
Butter: 2tbsp
Sugar: ¾ cup
Pineapple: 1 round slices and quarter pieces as required
Cake
Wheat flour: 1 ½ cups
Baking soda: 1tbsp
Baking Soda: ¼ tsp
Butter: ½ cup
Salt: a pinch
Powdered Sugar: 1 cup
Vanilla Essence: 1tsp
Eggs: 2 large
Milk: ½ cup


Method of Preparation
Grease a cake tray and dust with a little flour. Keep aside.
Topping
Heat a pan and add butter and sugar to it.
When sugar melts and becomes light brown color switch off the flame. Pour this mixture to a prepared cake pan.
Place the round pineapple piece at the center and the quarter sized piece around the round piece.
Cake
Separate the egg yolks and whites. Keep aside.
In a bowl add butter and sugar.
Beat until it becomes light and fluffy.
Add in the egg yolks to it and beat well.
Add vanilla essence and milk. Beat well again.
Then add baking soda and baking powder and salt to it. Again mix well.
Add the wheat flour and mix well without lumps.
In another bowl beat the egg whites until it becomes fluffy.
Gently fold the egg whites to the prepared cake batter.
Pour this batter into the prepared cake tray, on top of the pineapple.
Preheat the oven and bake it to about 40-50minutes at 1800C or until the cake test is done.
Remove from the oven and after 5 minutes invert the cake into the serving plate, Slice and Enjoy.

Basbousa/Semolina Cake in Sugar Syrup


Ingredients
Semolina/Rava: 1 ¼ cup
Flour: ½ cup
Egg: 1
Milk: ¾ cup (or adjust as needed to get thick batter)
Baking Powder: 1tsp
Baking Soda: a pinch
Butter: 8tbsp
Sugar: ¾ cup
Sugar Syrup
Water: 1 cup
Sugar: 1 cup
Rose water: 1tbsp
Lemon Juice: 2tbsp
Almonds/Any nuts: for topping

Method of Preparation
Sugar Syrup
In a pan add sugar, water and lemon juice. When it comes to boil, simmer the flame and let it be there for 5-6minutes.
Then add rose water to it. Keep for another 2 minutes.
Let the syrup cool.
Basbousa
In a bowl mix together semolina, flour, baking powder, baking soda, and sugar.
In another bowl beat the egg.
Melt the butter and let it come to room temperature.
Add milk, egg, and butter to the flour mix. Mix well with a ladle. The batter consistency should be thick.

Preheat the oven.
Transfer the prepared batter to a greased baking tray. Spread evenly.
With a sharp knife cut the basbousa diagonally to diamond shapes.

Keep almonds on each diamond. (I was out of almonds so I kept some cashews)

Bake to about 30-40 minute at 2000C or till it is done.
Remove from the oven and move the knife through the cuts we have done prior to baking.

Pour the prepared sugar syrup over the prepared basbousa. Keep it for a while till it gets soaked in sugar syrup.

Serve n Enjoy.

Baked Doughnuts With Chocolate Glaze


Ingredients
Yeast: 1tbsp
Butter: ¾ cup
Flour: 2 ¼ cup
Sugar: 5tbsp
Eggs: 1
Vanilla Essence: 1tsp
Salt: 1tsp
Warm Milk: ½ cup (as needed to knead the dough)
Chocolate Glaze:
Milk: ¼ cup
Cooking Chocolate: 150gms
Sugar Powdered: ½ cup

Method of Preparation
Chocolate Glaze
In a microwave safe bowl add in the milk and chocolate pieces.
Microwave to about 3-4 minutes or till the chocolates melts well.
Remove from the oven and add in the powdered sugar.
Stir well keep aside. (Prepare this when your doughnuts goes to the oven)
Doughnuts
In a bowl add yeast and warm milk. Keep aside for 5-8 minutes till it ferments.
In another bowl add butter and sugar and beat well.
Add in the eggs and mix well till it becomes fluffy n creamy.
Add in the vanilla essence and salt to it. Beat again.
Then add in the flour and yeast mix.
Knead well to form smooth dough.
Keep the dough for rising to about 2 hours.
Take the dough and roll to a rectangle shape and cut into a doughnut shape with a doughnut cutter. (I didn’t have a doughnut cutter, so I used a big and a small bottle cap)
Grease a baking tray and bake to about 20-25 minutes or till done.
Remove from the oven and cool on a wire rack
Dip in the above prepared chocolate glaze and serve.

I dipped the doughnut while the chocolate is hot so it didn’t coat well, next time will not commit the same mistake.

Tri Colored Cake



Ingredients
Maida/APF: 1 cup
Eggs: 3
Sugar: ½ cup
Oil: ½ cup
Vanilla Essence: ½ tsp
Salt: a pinch
Baking Powder: 1tsp
Baking Soda: a pinch
Milk: ¼ cup
Cocoa Powder: 2tbsp
Orange Color: 2drops

Method of Preparation
In a bowl add in the eggs and oil and beat until it is creamy.
Then add the milk and sugar and continue beating.
Then add salt, baking powder and baking soda to it and beat again.
Then add in the flour little by little and mix well.
Add vanilla to it and mix well.
Divide the batter to three portions in three bowls
Let the one portion be as it is
In second bowl add cocoa powder and mix well
Add the orange color to the third bowl.
Preheat the oven and grease the baking tray.
First add the cocoa powder mix, then add the orange color mix and finally add the vanilla mix.
(Should do the addition of these three colors fast into the tray)
Bake at 1800C to about 35-40 minutes or till the cake test is done.
Cool on a wire rack
Slice and serve.

Plaited Bread With Egg Filling



Ingredients
Wheat flour: 2cups
Yeast: 1tsp
Luke warm milk: 1 cup (or as needed to knead the dough)
Egg: 1
Salt: needed
Butter: ¼ cup
Sugar: 1tbsp
Egg white/ milk: for glaze
Filling
Eggs: 3
Onion: 1
Green Chilli: 2
Ginger finely chopped: 1tbsp
Curry leaves chopped few
Salt: needed
Oil: 2tbsp

Method of Preparation
Filling
Heat oil in a pan; add chopped ginger stir for a minute and add onion, green chilli and curry leaves.
When onion turns slight brown color, add salt and eggs to it.
Stir frequently till you get the eggs done.
Keep this aside, let it cool.
In a bowl add yeast, sugar and luke warm milk. Wait for 5-8 minutes till it rises.
In a bowl add wheat flour, salt, butter, egg and yeast mix. Knead well, till it becomes smooth.
Place a damp cloth over it and Keep aside for 2 hours or till it double the size.
Take the dough and roll to a rectangle shape.

Cut the sides into 1”stripes.
Add the egg filling to it length wise

Fold the stripes as plaiting and cover the filling.

Brush the top with egg white or milk.

Preheat the oven to 2000C and bake to about 25-30 minutes at 180 Deg C or till done.
Cut and serve when cooled.

Cake Topped Granola Bars

Ingredients
Oats: 1 ¾ cups
Jaggery powdered: 1cup (can decrease or increase as per your taste)
Butter: ¼ cup
Cinnamon Powder: 1tsp
Chopped nuts: ¼ cup (can use any of your choice)
All Purpose Flour/ Maida: 4-5tbsp
Sugar: 2-3tbsp
Butter: 2tbsp
Eggs: 1
Vanilla: ¼ tsp
Baking Powder: ¼ tsp
Salt: a pinch

Method of Preparation
In a blender coarsely powder the oats.
In a bowl add powdered oats, cinnamon powder, jaggery, chopped nuts and butter.
Mix well with hand (it will be only hardly wet, jaggery will melt and set it while baking).
Grease the tray and preheat the oven, add the above mix to the greased baking tray and press well with hand.
Bake at 1800C to about 15-18 minutes. Take out from the oven and let it cool.
Meanwhile prepare the cake batter.
Beat butter and eggs till it becomes fluffy.
Add in sugar to it and beat well again.
Then add baking powder and vanilla essence. Beat well again
Then add in flour and salt to it and beat well to get a lump less batter.
Pour this batter over the baked oat mix and keep in the oven and bake for another 15-20minutes or till the cake is done.
Let it cool.
Semi crunchy cake is ready to serve.
