Crunchy Dates Stuffed Banana Cutlet



Ingredients

Dates: 10

Coconut grated: 4tbsp

Raisins and cashews: few

Banana/Plantain: 3big

Sugar: 2tbsp
Ghee: 1tbsp

Vermicelli: 1cup

Egg: 1 (if required only, if banana is ripe enough egg not required)

Oil: for deep frying



Method Of Preparation

Cook, peel and mash banana. Keep this aside.

Heat ghee in a pan, add in cashews and then raisins. Then add in coconut and add deseeded and chopped dates.

Stir in low flame for a while till the dates turn slightly smooth.

Add in sugar. Mix the filling well.

Take egg and vermicelli in separate bowls.

Take small balls from mashed banana, then just flatten it with the palm and add in 1tsp dates filling and roll it.

Then first dip in egg and then roll in vermicelli and deep fry it till all sides turns golden brown.

Pazham Nirachath/Stuffed Plantain



Ingredients

Plantain/Banana: 4
Coconut: 1cup
Cardamom powder: ½ tsp
Cashews& raisins: 2tbsp each
Ghee: 2tbsp
Sugar: 2tbsp
Maida: ¼ cup (add a bit salt and 1/2tsp sugar to it)
Oil: 4tbsp or as needed for shallow fry


Method Of Preparation

Make lengthwise 4 slits on banana.
Heat ghee in a pan, add cashews and raisins and roast it.
Then add grated coconut to it. Stir for 2minutes and switch off the flame. Then add in sugar and cardamom powder to it and stir.
In another bowl take maida and add little water and salt and sugar and make smooth paste out of it.
Take the slit bananas; carefully fill in the coconut mix through the slits.
Close the slits with the maida paste.
Heat oil in a pan and add the bananas to it and shallow fry the bananas till all sides turn golden brown.

Oats-Corn Flakes Ladoo


Ingredients
 Oats: ½ cup
Corn Flakes: 1 cup
Jaggery: ¼ cup
Water/Milk: as needed (approx. 3-4tbsp)
Nuts/Raisins: if needed (I didn’t add)



Method Of Preparation
Dry roast the oats for about five minutes. Powder it when it is slightly cooled.
Then add the corn flakes to the blender and powder it coarsely.
Transfer the powdered oats and corn flakes into a bowl.
Then add the jaggery to the blender and powder it.
Add the blended jaggery to the oats cornflakes mix. If you are adding roasted nuts add at this stage.
Add a bit of water or milk to it so that we can get the consistency to make balls out of it.
Make small balls. Store it in an air tight container and serve

Welcoming 2013 With Chocolate Dipped Cake With Praline Topping

Ingredients
Vanila cake cut into slices: 8
Praline: as needed
Cooking Chocolate: 4-6 squares or as needed
Method Of Preparation
Cool the cake well. Cut it into 2” thick slices and keep in refrigerator for few hours.
Melt the chocolate in a double boiling method or you can do it in microwave too.
Dip the cake slices in the melted chocolate using a tooth pick or bamboo skewer and coat well.
Place this on a butter paper and sprinkle vigorously praline on top of it.
Let it cool. Delicious chocolate covered cake is ready to serve.

Candied Orange Peels

Ingredients
Orange Peels: 3 oranges (approx.)
Sugar: 1 cup   
Method Of Preparation
Pressure cook the peel cut into two in a pressure pan for two whistles with two cups of water.
Take out the peel and cut them into strips. Discard the water.
Add in the peel and 3/4 cup sugar and 1/2 cup water and cook further for half an hour in low flame in a non stick pan.
The peels become glazed with the sugar syrup.
Let them cool and once cooled dip them in the remaining 1/4 cup sugar.
Take out the peels and line them in the baking tray lined with parchment paper.
Bake them for 15- 20 minutes at 100 degreeC . Do check in between so that it don't get burnt.
Remove the tray and let it cool completely.
Store in airtight containers and use them as per requirement.

Corn Flakes- Peanut Ladoo



Ingredients
Peanuts: 1 cup
Jaggery grated: 1 cup
Cardamom: 3
Corn Flakes: 1 cup

Method Of Preparation
Roast peanuts in microwave for 1 ½ minutes and remove the skin.
In a blender add corn flakes and powder it. Take it out and grind roasted peanuts with jaggery and cardamom seeds in a mixer. Mix all together well with hand and make small sized balls.

Grind roasted peanuts with jaggery and cardamom seeds in a mixer. Mix well and make small sized balls.

Spiral Apple Bread

Thanks a lot dear for such a simple n yummy bread recipe. As soon as I saw this I was so tempted to give it a try and it came out so well.
Ingredients
Wheat Flour/ Flour#2: 2 cups
Warm Milk: 1 cup or as needed to knead the dough
Butter: 2tbsp
Sugar: 2tbsp
Yeast: 1tsp
Salt: needed
Apples: 2 apples cored and sliced.
Egg: for egg wash
Topping
Melted butter: needed to brush on top
Sugar to sprinkle on top

Method Of Preparation
In a cup add yeast, sugar and ¼ cup warm milk. Let it rest for 5-10 minutes or till it ferments.
Add butter to ¾ cup warm milk.
In a bowl add wheat flour and salt. Add fermented yeast and balance warm milk to it.
Knead to very smooth n sticky dough. Keep covered to about 1 hour or till it doubles the size.
Take the dough and punch down the air.
Roll it flat and cut into stripes.
Take a greased baking tray or baking tray lined with butter paper and start coiling.
Starting at the center of pan, coil apple slices with dough strips into a spiral, pinching ends securely as strips are added.
Brush with egg wash on top and let it sit covered for another 30 minutes.
Preheat the oven and Bake for 35 to 40 minutes or until golden brown. Brush with melted butter then sprinkle with sugar. Cut into slices to serve.
