Corn Flakes- Peanut Ladoo



Ingredients
Peanuts: 1 cup
Jaggery grated: 1 cup
Cardamom: 3
Corn Flakes: 1 cup

Method Of Preparation
Roast peanuts in microwave for 1 ½ minutes and remove the skin.
In a blender add corn flakes and powder it. Take it out and grind roasted peanuts with jaggery and cardamom seeds in a mixer. Mix all together well with hand and make small sized balls.

Peanut Ladoo

Ingredients
Peanuts: 1 cup
Jaggery: 1/2 cup
Cardamom: 3   
     
Method Of Preparation
Roast peanuts in microwave for 1 ½ minutes and remove the skin.
Grind roasted peanuts with jaggery and cardamom seeds in a mixer. Mix well and make small sized balls.

Peanut Chutney



Ingredients
Peanuts: 1 cup
Grated Coconut: ½ cup
Dry Red Chilli: 6 or as per your tolerance (roast the chilli in 1tsp oil)
Tamarind: 2” piece
Salt: needed
Coconut oil: 2tbsp
Mustard Seeds: ½ tsp
Curry leaves: few

Method Of Preparation
Heat a griddle and roast the peanut or you can roast it in microwave too by keeping in high power for 2 minutes.
Remove the skin well.
In a blender add roasted peanuts, coconut, roasted dry red chilli and tamarind. Add needed water.
Blend it well.
Heat oil in a pan and splutter mustard seeds and add curry leave s to it. Then add the blended mix and add salt to it.
When it heats up, switch off the flame. Be careful not to boil it.

Mixed Nuts Mittai/Chikkis



Ingredients
Unsalted and roasted Mixed Nuts (almonds, cashew nuts, pistachios, peanuts): 2 ½ cups
Jaggery grated: 1 ¾ cups
Water: ½ cup
Method Of Preparation
After roasting, remove the skin of peanuts and pistachios by rubbing with palms
Crush the nuts with a mortar lightly (don’t make it too small pieces)
In a pan add jaggery and water and heat it.
When jaggery melts switch off the flame and strain to remove the impurities.
Again keep the melted and strained jaggery on stove.
Let it boil and when it reaches the consistency (to check the consistency drop the jaggery mix to cold water and if it don’t spread then it is the consistency) add the nuts to it and stir and switch off the flame.
Soon transfer it to a greased plate/tray and spread it flat and make cut out lines so that it would be easy to cut after cooling.
Served when cooled completely.

Kadala Mittai/ Kadala Burfi


Here comes one of my favorite sweet. I was just like a kid when I made this, my God just want to complete the process and have a piece from it. I didn’t just go for balling it, because I know while balling only I will finish it off. I pour the hot mixture to a greased steel bowl and took out after cooling. I didn’t just give it a time to cool completely. I took it out from the bowl and I wanted to make it into square pieces but my urge for it didn’t allow me do so. I don’t know how I finished taking snaps, how wonder, before cooling completely I and my kids finished it off.
Ingredients
Roasted Peanuts: 2 cups
Jaggery: 1 cup
Cardamom powder: ½ tsp

Method of Preparation
Heat ¼ cup water and add jaggery to it.
When jaggery melts completely strain it and keep it on the stove again.
Let it boil and stir continuously, when it thickens, just a drop of it to cold water, if it rolls that is the consistency.
Then add the roasted peanuts and cardamom powder to it and stir well and switch off the flame.
Add in this to a greased bowl. Let it cool and cut into pieces and enjoy.
