Mushroom Mini Pizza




Ingredients


D0ugh

All Purpose Flour: 1 ¾ cups
Warm Milk: ½ cup
Milk Powder: 2tbsp
Warm Water: ¼ cup (or as required)
Roux:2tbsp (3/4tbsp flour + 1/4cup water, combine and cook till you get a smooth paste)
Sugar: 1 ½ tbsp
Salt: needed      
Oil: 2tbsp              
Melted Butter: 4tbsp or olive oil
Yeast: ¾ tsp
Olives chopped: 1cup
Tomato Ketchup/pizza sauce: as needed
Mushroom sliced 1 cup (I used the canned ones)
Mozzarella Cheese: as needed
Egg: Egg wash



Method Of Preparation

Sieve the flour, then add milk powder, sugar, yeast and salt. Then add the oil and roux and mix together. Now add all the milk. Starts kneading together and gradually add water a little at a time. You might not need it all, so add it sparingly until your dough is nice and soft. Add butter or olive oil in between while kneading the dough. Knead for 8-10 minutes. The more you knead it the softer the buns will be.



Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40mins to an hour for it to double in size.



Punch down the dough. Take the baking tray and grease it or line with butter paper.

Divide the dough into 6-7equal balls. Flatten each ball into mini sized chapathis 1” thick. Prick the flattened dough several times with fork so that the dough won’t puff up while baking. Apply egg wash on it. Then spread tomato ketchup or pizza sauce.Then add chopped olives and mushrooms and sprinkle with mozzarella cheese on top.


Place it in the greased tray and bake in pre heated oven at 160 Deg C to about 20 -25minutes or till done.

Chicken & Olives Salad



Ingredients
Onion: 1 small
Capsicum: 1
Tomato: 1
Cucumber: 1
Carrot: 1
Shredded Chicken: one cup (I marinated chicken with turmeric, chilli and salt and fried)
Mustard leaves chopped: ¼ cup
Sweet corn cooked: ½ cup
Coriander leaves chopped: 4tbsp
Olives: Black & Green: 10 each
Salt: needed
Lemon juice: of 1 lemon or as needed
Pepper powder: ½ tsp
Cumin powder: ½ tsp
Olive oil: 1 + 1tbsp

                                 
Method Of Preparation
Chop capsicum and sauté it in olive oil for 2 minutes.
In a bowl add sautéed capsicum, finely chopped onion, tomato, cucumber, carrot, mustard leaves, chopped olives, shredded chicken and coriander leaves.
Add in sweet corn and mix.
Dress it with olive oil, pepper powder, cumin powder, lemon juice and salt.
Chill for few minutes or serve as it is.

Sausage-Olive Omelete



Ingredients
Egg: 4
Green/Black Olives: 12
Sausage: 2
Onion: 1 small
Tomato: 1 small
Green chilli: 2
Coriander leaves: 1 string
Garam masala: ¼ tsp
Salt: needed
Refined/coconut oil: 3tbsp

Method Of Preparation
Chop onion, tomato, green chilli, sausage, olives and coriander leaves.
Break the eggs to a bowl and then add chopped veg and sausage to it.
Add salt and garam masala to it and stir well.
Heat oil in a non stick pan,
Then add the egg mix and lower the flame and close with the lid.
Flip it after few minutes or when one side is done.
Keep for few more minutes till the other side of omelet is cooked.
Serve hot with roti/rice.

Veg.Salad With Tahini Dressing


Ingredients
Onion: 1
Carrot: 1
Cucumber: 1
Tomato: 1
Capsicum: 1
Tahini sauce: 1 cup (or as per taste)
Black Olives whole: 10-15
Salt: needed
Olive Oil: 2tbsp
Lemon juice: 2tbsp (optional)
Method Of Preparation
Heat oil in a pan and add capsicum and roast it for few minutes without losing its crunchiness.
Chop carrot, onion, cucumber and tomato.
In a bowl take all the vegetables, black olives and add tahini sauce and salt if needed.
Mix well with spoon.
Add lemon juice (this step is optional, if you like it a bit tangy you can add lemon juice otherwise avoid the step.)
Refrigerate it for one hour and serve chilled.

Olive-Zatar Focaccia


EID MUBARAK 
Ingredients
Wheat Flour: 4cups
Yeast: 2tsp
Sugar: 1 ½ tsp
Salt: needed
Olive oil: 2tbsp
Warm water: 1 ¼ cups (or as needed)
For Topping
Black Olives: needed
Zatar: 4-5tbsp (you can add more if needed)
Olive Oil: 3-4 tbsp
Egg white/milk: for brushing


Method Of Preparation
In a bowl add sugar, yeast and ¼ cup luke warm water. Wait for 5-8 minutes till it gets fermented.
In another bowl take wheat flour and salt.
Then add the fermented yeast, olive oil and warm water and knead to form soft dough (the dough should not be too sticky or too hard, consistency is somewhat sticky dough)
Wait for 45 minutes-1 hour or till the dough double its size.
Take the dough and roll on a floured or oily surface.
Roll flat to a 1 ½ ” thick dough. Brush the top with egg white.
Mix olive oil and zatar together and brush on top of the dough well. Press with fingers on top or prick with a fork. Spread the chopped olives on top of the dough.
Cover with a damp cloth and wait for another 15-20 minutes.
Meanwhile preheat the oven.
Bake at 1800C to about 45-50 minutes or till done.
Cool on a wire rack
Slice and serve.

Note: While you use wheat flour, knead the dough with warm water so as to get good outcome.

Olive Focaccia



Ingredients
Wheat Flour: 2cups
Yeast: 1tsp
Sugar: 1tsp
Salt: needed
Olive oil: 2tbsp
Warm water: 1 ¼ cups (or as needed)
Green Olives: needed
Egg white/milk: for brushing

Method Of Preparation
In a bowl add sugar, yeast and ¼ cup luke warm water. Wait for 5-8 minutes till it gets fermented.
In another bowl take wheat flour and salt.
Then add the fermented yeast, olive oil and warm water and knead to form soft dough (the dough should not be too sticky or too hard, consistency is somewhat sticky dough)
Wait for 45 minutes-1 hour or till the dough double its size.
Take the dough and roll on a floured or oily surface.
Roll flat to a 2” thick dough. Brush the top with egg white. Press with fingers on top or prick with a fork. Spread the chopped olives on top of the dough.
Cover with a damp cloth and wait for another 15-20 minutes.
Meanwhile preheat the oven.
Bake at 1800C to about 35-40 minutes.
Cool on a wire rack
Slice and serve.

You can replace the wheat flour to All purpose flour to get it more softer. With wheat flour itself was soft and delicious.
