Chicken Bread Roll


Ingredients
Bread: 10 slices
Boneless Fried Chicken: 1 cup, make into small pieces
Onion: 1 sliced
French Fries: 1 cup
Carrot Slice Length wise: ½ cup
Egg: 2
Bread Crumbs: as required
Oil: required for deep frying


Method Of Preparation
Dip the bread slightly in water and press using both hands to remove the excess water. You can skip this step if the bread is soft enough to roll.
Add 1 tbsp of chicken, 2 carrot pieces, 2 pieces of French fries and onion slice into the bread and roll it.
Dip the bread in egg and roll in bread crumbs. Deep fry in oil till both sides turns golden brown.

Serve with tomato ketchup or any sauce of your choice.

Fried Burger Bun Sandwich



Ingredients
Burger Bun or Normal Bun: 6
Sausage: 1 pack
Onion: 1
Tomato: 1
Chilli powder: ½ tbsp.
Turmeric Powder: ¼ tsp
Garam Masala: ¼ tsp
Coriander leaves: needed
Salt: a pinch
Oil: for deep frying + 1tbsp for marination: 3tbsp for masala
Egg: 2
Bread crumbs as needed


Method Of Preparation

Masala
Defrost and cut the sausages. Marinate it with chilli powder, turmeric powder, garam masala, oil and salt.
Heat oil in a wide pan and roast the sausages by stirring in between. When it is almost done add the finely chopped onion and tomato to it. Can add salt if required.
Stir and cook till onion and tomato is cooked. Add coriander leaves and switch off the flame.
Bun Fry
In a separate bowl beat the egg and in separate bowl take the bread crumbs.

Heat oil in a deep pan and add needed oil for deep frying.

Take each bun and dip in the egg first and then roll it in bread crumbs, again dip in egg and roll in bread crumbs and deep fry in oil till all sides turn golden brown.


Give a slit in the middle of the bun and fill in the sausage masala and serve hot.

Sausage Tortilla Wraps



Ingredients

Tortilla



Maida: 1 cup

Baking powder: ¼ tsp

Salt: needed

Luke warm water: needed to make soft dough

Filling

Sausage: 10piece

Onion: 1

Kashmiri Chilli powder: 1/2tbsp

Turmeric powder: ¼ tsp

Lemon juice: 2tbsp

Salt: as needed
oil: 2tbsp

Tomato: 1

Coriander leaves chopped: 2tbsp




Method Of Preparation



Tortilla



Make a soft dough by kneading well with maida, baking powder, salt and luke warm water. Make lemon sized balls out of it and roll it into very thin chappathis. Heat a griddle and cook each chappathis on both sides slightly till half done. Keep this aside.

Filling

Cut sausage into small pieces. Marinate it with chilli powder, turmeric powder and lemon juice.

Heat oil in a wide pan and add the marinated sausage to it.

Stir for 4-5minutes in medium flame.

Then add finely chopped onion and salt to it.

Stir in low flame to about 4more minutes

Switch off the flame.

Then add in finely chopped tomato and coriander leaves.



Arranging

Take one tortilla. Add the filling to it and roll it.

Grill it in a pre-heated toaster to about 3minutes or till done.

Prawns Dry Fry With Red Chilli Flakes


Ingredients
Prawns cleaned- 500gms
Crushed red chili flakes: 2tbsp
Onion crushed: 1 /shallots crushed: 8nos
Curry leaves: few
Coconut oil: 2tbsp
Salt: needed
Lemon Juice: 1tsp


Method Of Preparation:
In a pan add prawns, crushed onion, chilli, salt, curry leaves and oil.
Sprinkle some water. Keep on stove and close with lid and lower the flame.
When water starts oozing from prawns increase the flame and open the lid and cook. Stir frequently when the gravy becomes thick and till it gets dry.
Then add coconut oil and curry leaves and lemon juice and switch off the flame.

Fish Roll



Ingredients


Dough

All Purpose Flour: 1 ¾ cups

Warm Milk: ½ cup
Milk Powder: 2tbsp
Warm Water: ¼ cup (or as required)
Roux:2tbsp (3/4tbsp water + 1/4cup water, combine and cook till you get a smooth paste)
Sugar: 1 ½ tbsp
Salt: needed        
Oil: 2tbsp                 
Melted Butter: 4tbsp or olive oil
Yeast: ¾ tsp

Toppings

Tuna Fish: 1 tin (can use any fleshy fish)

Onion: 1

Green Chilli: 2

Tomato: 1

Turmeric Powder: ¼ tsp

Chilli powder: ½ tsp

Lemon Juice: 2tbsp

Oil: 3ybsp

Salt: needed

Coriander leaves: 2tbsp

Cream Cheese: 5tbsp (you can use mozzarella too)



Egg: Egg wash






Method Of Preparation

Dough

Sieve the flour, then add milk powder, sugar, yeast and salt. Then add the oil and roux and mix together. Now add all the milk. Starts kneading together and gradually add water a little at a time. You might not need it all, so add it sparingly until your dough is nice and soft. Add butter or olive oil in between while kneading the dough. Knead for 8-10 minutes. The more you knead it the softer the buns will be.



Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40mins to an hour for it to double in size.



Punch down the dough. Take the baking tray and grease it or line with butter paper.

Filling

Heat oil in a pan. Add oil and add chopped onion. When onion turns transparent add in turmeric powder, chilli powder and salt. Then add in the fish, tomato and green chilli. Saute for a while, in low flame. When done switch off the flame and add in coriander leaves. Keep it aside to let it cool.

Flatten the dough to ½ inch thick. Spread the filling on to it and roll. Cut the log horizontally into 4 0r 5 piece. Egg wash it on top and arrange into the baking tray by keeping the cut side down. Apply cream cheese on top of each roll.

Bake in pre heated oven at 160 Deg C to about 25 – 30 minutes or till done.

Sausage Mini Pizza



Ingredients


D0ugh

All Purpose Flour: 1 ¾ cups

Warm Milk: ½ cup
Milk Powder: 2tbsp
Warm Water: ¼ cup (or as required)

Sugar: 1 ½ tbsp
Salt: needed        
Oil: 2tbsp                
Melted Butter: 4tbsp or olive oil
Yeast: ¾ tsp

Olives chopped: 1cup

Sausage: 3

Mozzarella Cheese: as needed

Egg: Egg wash


Method Of Preparation

Divide the dough into 6-7equal balls. Flatten each ball into mini sized chapathis. Prick the flattened dough several times with fork so that the dough won’t puff up while baking. Apply egg wash on it. Then add chopped olives and sausages and sprinkle with mozzarella cheese on top.

Place it in the greased tray and bake in pre heated oven at 160 Deg C to about 20 -25minutes or till done.

Murtabak (Meat Stuffed Roti)



















Ingredients

Dough

Maida/Plain Flour: 2cups

Salt: needed

Luke warm water: 3/4th cup

Oil: ¼ cup while kneading + ¼ cup while cooking

Filling

Minced meat: 500gms

Onion: 1 large

Garlic and ginger paste: 1tsp

Turmeric powder: ½ tsp

Garam Masala: ½ tsp

Coriander leaves chopped: 3tbsp

Lemon Juice: 2tbsp

Salt: needed

Pepper powder: ½ tsp

Eggs: 2




























Method Of Preparation

Dough

In a bowl add flour, salt and add 3tbsp oil and rub with hand. Add water little by little and knead it to smooth dough. Take time and knead to about 10minutes. Add oil in between while kneading. Apply oil and cover the dough with a wet cloth and keep in a closed bowl. Let it rest for about an hour.

Filling

Heat oil in a pan and add chopped onion. Sauté till it becomes translucent. Then add the ginger garlic paste. Saute for a minute and add turmeric powder and garam masala. Then add green chilli and minced meat it. Add salt. Stir and close and cook in low flame till it is done. Switch off the flame and add coriander leaves and lemon juice and let it cool. When cooled add the eggs and pepper powder and stir.

Heat the griddle and drizzle some oil to it.

Divide the dough into small equal balls. Flatten each ball on an oily surface with a rolling pin to as much as thin it can be. Then add 3-4tbsp filling in the middle and fold it from four sides. Place this carefully to the hot griddle. Cook both sides in low flame by drizzling oil in between. When both sides are cooked well, remove to a plate and cut into square pieces and serve hot.

Minced Meat Stuffed Muffin Buns




Ingredients

Dough
All Purpose Flour: 1 ¾ cups
Warm Milk: ½ cup
Milk Powder: 2tbsp
Warm Water: ¼ cup (or as required)

Sugar: 1 ½ tbsp
Salt: needed        
Oil: 2tbsp                   
Melted Butter: 4tbsp or olive oil
Yeast: ¾ tsp

Filling
Minced meat: 500gms
Onion: 1
Green chilli: 1
Turmeric powder: 1/4tbsp
Chilli powder: ½ tsp
Coriander powder: ¼ tsp
Garam masala ½ tsp
Lemon juice: 2tbsp
Coriander leaves finely chopped: 2tbsp
Oil: 4tbsp
Salt: needed

Egg: 1 for egg wash






Method Of Preparation

Filling

Heat oil in a pan. Add in finely chopped onion. Sauté till it becomes transparent. Then add on chopped green chilli. Saute for a minute. Then add in turmeric powder, chilli powder, coriander owder, salt and garam masala. Stir and sauté for 20sec and then add in washed and drained minced meat. Stir well and close with a lid and cook till meat is done. Open the lid and if there is gravy increase the flame and stir in till you get it dry. Then add in lemon juice and coriander leaves and switch off the flame. Let it cool.

Dough

Sieve the flour, then add milk powder, sugar, yeast and salt. Then add the oil and roux and  mix together. Now add all the milk. Start kneading together and gradually add the water a little at a time. You might not need it all, so add it sparingly until your dough is nice and soft. Add butter or olive oil in between while kneading the dough. Knead for 8-10 minutes. The more you knead it the softer the buns will be.

Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40mins to an hour for it to double in size.

Make small equal balls out of the dough

Take each ball and just flatten it by keeping inside your palm. Add in a tbsp. filling to it and roll it.

Grease a muffin tray and place the balls into it.

Egg wash each muffin buns.

Bake it in pre heated oven at 160 deg C to about 15 – 20minutes or till done.

Sausage Sandwich



Ingredients

Sausage: 10piece

Onion: 1

Kashmiri Chilli powder: 1/2tbsp

Turmeric powder: ¼ tsp

Lemon juice: 2tbsp

Salt: as needed
oil: 2tbsp

Tomato: 1

Coriander leaves chopped: 2tbsp

Bread 10slices

Tomato ketchup: 5tbsp



Method Of Preparation



Filling

Chicken Cutlet



Ingredients

Chicken: 1 breast piece

Potato: 1

Onion: 1

Green Chilli: 2

Ginger finely chopped: 1tsp

Garlic finely chopped: ¼ tsp

Garam Masala: ¼ tsp

Turmeric powder: ½ tsp + ¼ tsp

Coriander powder: ¼ tsp

Pepper powder: ¼ tsp

Salt: needed

Coriander leaves chopped: 2tbsp

Curry leaves: few

Egg:1

Bread crumps: 1 cup

Oil: for deep frying +2tbsp

Method Of Preparation

Pressure cook the chicken breast and potato by adding salt and ½ tsp turmeric powder. After cooking drain the water and keep aside. When cools shred the chicken and mash the potato.

Heat oil 2tbsp oil and sauté onion. When it becomes transparent add in green chilli, curry leaves, ginger and garlic. Saute for a minute.

Now add in turmeric powder, garam masala and coriander powder.

Stir and add in shredded chicken. Stir for 3 or 4 minutes in low flame.

Then add in mashed potato and salt if needed. Mix it well. Then add in coriander leaves and pepper powder and stir and switch off the flame. Let it cool.

Take egg and bread crumps in separate bowls.

Heat oil in a kadai.

Take the chicken mix and make small oblong balls, dip first in egg and then roll in bread crumps and deep fry in oil.

When turns golden brown, take out and serve with tea.

Mutton Korma



Ingredients

Mutton: 1kg

Onion: 2

Tomato: 1

Garlic: 5cloves

Ginger: 1” piece

Green Chilli: 4

Turmeric powder: 1tsp

Pepper powder: 1tsp

Garam Masala: ½ tsp

Whole Spices(Cloves, bay leaves, cinnamon, cardamom): each 1piece

Fenugreek Seeds: ¼ tsp

Cashews: 12-15

Coconut milk: 1cup first milk + 2 cups second milk (or coconut milk powder 5tbsp)

Salt: needed

Coriander leaves & Curry leaves: needed

Oil: 4tbsp



Method Of Preparation

Clean and wash the mutton and drain and keep.

Soak cashews in water for 30minutes. And grind to a smooth paste.

Grind together garlic, ginger and green chilli.

Heat oil in the pan, add in oil and fenugreek seeds and add the whole spices.

Then add in chopped onion.

Saute it well and then add the ginger garlic paste.

Then after a minute add in chopped tomato and curry leaves.

Saute till tomato is well mashed.

Then add in turmeric powder.

Then add mutton pieces and 2 cups coconut milk.

Add salt and close with a lid.

When boils, keep in low flame and stir in between.

When mutton is done and gets the consistency, add in cashew paste, pepper powder and garam masala. Stir well and then increase the flame.

Then add in coconut milk and coriander leaves and switch off the flame.
