Sausage Tortilla Wraps



Ingredients

Tortilla



Maida: 1 cup

Baking powder: ¼ tsp

Salt: needed

Luke warm water: needed to make soft dough

Filling

Sausage: 10piece

Onion: 1

Kashmiri Chilli powder: 1/2tbsp

Turmeric powder: ¼ tsp

Lemon juice: 2tbsp

Salt: as needed
oil: 2tbsp

Tomato: 1

Coriander leaves chopped: 2tbsp




Method Of Preparation



Tortilla



Make a soft dough by kneading well with maida, baking powder, salt and luke warm water. Make lemon sized balls out of it and roll it into very thin chappathis. Heat a griddle and cook each chappathis on both sides slightly till half done. Keep this aside.

Filling

Cut sausage into small pieces. Marinate it with chilli powder, turmeric powder and lemon juice.

Heat oil in a wide pan and add the marinated sausage to it.

Stir for 4-5minutes in medium flame.

Then add finely chopped onion and salt to it.

Stir in low flame to about 4more minutes

Switch off the flame.

Then add in finely chopped tomato and coriander leaves.



Arranging

Take one tortilla. Add the filling to it and roll it.

Grill it in a pre-heated toaster to about 3minutes or till done.

Grilled Butterflied Chicken



Ingredients
Chicken: 900gms
Kasmiri Chilli Powder: 2tbsp
Lemon juice: 4tbsp
Vinegar: 1tsp
Garam Masala: 1tsp
Salt: needed
Olive oil: 5-6tbsp (or as per required)

Method Of Preparation
The method to cut the chicken to butterfly
Butterflying chicken is a technique in which you remove the backbone from the chicken and flatten the chicken. It's a great technique to use if you're grilling a whole chicken because it will cook faster and more evenly than it would if it was whole. To butterfly a chicken, place it on a cutting board with the breast side down and the tail of the chicken facing you. Using kitchen shears, cut down the entire length of one side of the backbone. With the breast side still down, turn the chicken so that the neck end is facing you. Cut along the entire length of the other side of the backbone. Remove and discard the backbone. Turn the chicken over so that the breast side is up. Open the chicken out onto the cutting board. Flatten the chicken using the palm of your hand. (You can utilize the back bone for making chicken stock)

Wash the chicken well, I removed the chicken skin, you can do it either way.
In a bowl add kashmiri chilli powder, lemon juice, vinegar, garam masala, salt and 2tbsp olive oil. Mix it well with hand.
Marinate the chicken with the prepared marinate. Keep for 3-4 hours.
This time I grilled in the gas cooking range. Brushed the chicken in between while cooking with olive oil vigorously to avoid getting it dried. It took around 55-60 minutes in medium flame.
Serve hot with any roti of your choice.

Tandoori Chicken(Grilled)



Ingredients
Chicken: 1000gms
Eastern Tandoori Chicken Masala: 4tbsp
Ginger-Garlic paste: 2tbsp
Lemon Juice: 3-4tbsp
Curd: 2-3tbsp
Salt: needed
Olive Oil: 3tbsp
Method Of Preparation
Cut the chicken to 6 or 8 pieces. Wash and make slits on it. Darin and keep this aside.
In a bowl add tandoori chicken masala, ginger garlic paste, lemon juice, curd and salt.
Mix well with hand.
Add chicken pieces to it and marinate chicken to about 3-4 hours.
Pre heat the oven and grill the chicken to about 35 minutes.
In between brush the chicken pieces with olives to avoid the chicken pieces being dry.
Apply olive oil vigorously and put in convection mode at 200 Deg C to about 7-10 minutes. ( to get a burnt effect, be careful not to burn it :) keep an eye on it while in convection mode )
Serve hot.

Spicy Grilled Chicken



Ingredients
Chicken: 900gms (with skin)
Kashmiri Chilli powder: 2tbsp
Ginger: 1” piece
Garlic: 3 cloves
Green chilli: 1
Coriander leaves finely chopped: 2tbsp
Jeera/cumin powder: 1tsp
Cardamom: 3
Garam Masala: 1tsp
Curd: 1tbsp
Lime juice: ¼ cup
Salt: needed
Olive Oil: needed for brushing
Method Of Preparation
Wash and drain the chicken.
In a blender blend, garlic, ginger, green chilli, cardamom, garam masala, chilli powder, jeera powder, coriander leaves, curd, lime juice and salt.
Blend well to a smooth paste.
Marinate the chicken with the blended paste.
Marinate for 4 hours.
Preheat the oven and grill the chicken to about 45-50 minutes by brushing with olive oil in between to avoid the chicken from drying.
Serve hot.

Spicy BBQ Grill Chicken



Ingredients
Chicken: 1000gms
Shan BBQ powder: 3tbsp
Lemon juice: 1tbsp
Method Of Preparation
Wash and cut the chicken into two pieces with skin. (You can marinate the whole chicken too)
In a bowl add BBQ powder and lemon juice.
Marinate the chicken with the above mix. Keep for 3 hours.
Preheat the oven and grill the chicken for about 40-45 minutes or till done.
Serve hot with Roti, chappathi……

Chicken Tikka



Ingredients
Chicken Boneless Cubes: 800gms
Lemon juice: 1 lemon
Yogurt: ½ cup
Garlic: 6 cloves
Ginger: ½” piece
Cumin Seeds: 1 tsp
Kashmiri Chilli Powder: 2tbsp
Coriander leaves chopped: 3tbsp
Fenugreek leaves powder: ¼ tsp
Cardamom pods: 4
Garam Masala: ½ tsp
Tomato: 1 big
Salt: needed
Olive oil: 3tbsp + for brushing
Capsicum: 2
Tomato: 2
Onion: 2

Method of Preparation
In a blender add garlic, ginger, cumin seeds, Kashmiri chilli powder, coriander leaves, fenugreek leaves powder, cardamom pods, garam masala, 1 tomato and salt.
Blend it a smooth paste.
In bowl take yogurt and beat well with a spoon, add lemon juice and above grinded paste to it.
Add olive oil to it and mix well with hand.
Take 4tbsp from the above marinade mix and keep aside.
Then add the chicken cubes to it and mix well with hand. Marinate to about 4hours.
In another bowl add capsicum cubes, onion cubes and tomato cubes. Take the 4tbsp marinade which is kept aside and add to the vegetables. Mix well with hand.
After 4 hours, preheat the oven.
In a skewer add chicken cubes and vegetables. Grill to about 20-25 minutes by brushing with olive oil in between for preventing the chicken not to be dry.

Grilled Chicken



Ingredients
Whole Chicken With Skin: 1000gms
Lemon juice: 4tbsp
Olive oil: 1tbsp
Zatar: 1tbsp
Salt: needed

Method of Preparation
Clean the chicken well and drain it.
In a bowl take zatar, Arabic spice mix, 1tbsp lemon juice and oilive oil.
In another bowl take 3tbsp lemon juice and salt.
Take the chicken and spread the zatar spice mix inside the chicken well. (apply the spice mix only inside and not all over the chicken)
Then apply the lemon salt mix all over the chicken well and marinate to about 4-5hours.
Preheat the oven and place the chicken on a wire rack grill the chicken to about 45-50 minutes or till done.

Grilled Whole Chicken



Ingredients
Chicken: 1kg (whole chicken with skin)
Lemon Juice: 4tbsp
Ginger paste: 1tbsp
Garlic Paste: 1tbsp
Salt: needed

Method of Preparation
Wash the chicken well. Drain well
In a bowl add lemon juice, garlic paste, ginger paste and salt.
Mix well with hand. Marinate the chicken with the above mix and keep aside for 2-3 hours.
Preheat the oven and grill the chicken in a wire rack to about 45-50 minutes or till done.
Serve with Roti or chappathi.
