Lebanese Bread


Ingredients
Maida: 1 cup
Wheat Flour: 1 cup
Yeast: 1 ½ tsp
Warm Water: needed
Sugar: 1 tbsp
Salt: needed
Olive oil: needed
Method of Preparation
In a bowl, add yeast, sugar and some warm water. Keep aside for minute so that the yeast gets dissolved.
In a bowl; take maida and wheat flour. Add the yeast mix and slowly add warm water to make it smooth dough.
While kneading the dough add some olive oil also.
Take time and knead the dough. Keep aside for 2 hours in a greased air tight bowl.
Knead it once more after 2hours.
Take small balls out of it, roll it in round ½” thick rotis
Preheat the oven, Place pizza stone or any suitable pan in oven
Place each roti on the pan and grill till it puffs up and turns brown. Turn over in between so that both sides turns brown.

Chana Dal Vada Masala


Ingredients
Onion: 2
Tomato: 2 big
Ginger paste: 1 tbsp
Garlic paste: 1tsp
Turmeric powder: 1tsp
Chilli powder: 1tbsp
Coriander powder: ½ tbsp
Garam masala powder: 1tsp
Curry leaves: few
Coriander leaves: 1 string
Salt: needed
Oil: 4tbsp
Method of Preparation
Cut each parippu vada into 4 pieces. Keep aside.
Heat oil in a pan, add chopped onions.
When it turns slight brown color add ginger garlic paste. Stir for a while.
Add chopped tomatoes, when tomatoes get cooked,
Add garam masala, turmeric powder, chilli powder, coriander powder.
Stir for a while and add 1 ½ cup water and salt to it.
When it boils add the vada pieces.
Put in low flame, stir frequently till the gravy becomes thick.
When the gravy becomes thick add curry leaves and coriander leaves.
Switch off the flame.
The better it tastes when the vada gets soaked in gravy well.
Goes well with chappathi.

Red Spinach Stir Fry


Ingredients
Red Spinach/ cheera: 1 bunch
Onion: 1small
Green Chilli: 2
Coconut Oil: 2tbsp
Salt: needed
Method of Preparation
Wash and chop red spinach finely.
Heat oil in a pan, add chopped onion, when it becomes slight brown
Add green chilli and chopped red spinach and salt.
Stir well, lower the flame, but do not close with a lid.
If we close with a lid, water will come from it and if we try to evaporate complete water from it, it will get over cooked and slight bitter taste would add to the dish.
Stir frequently till it gets cooked. Be careful not to overcook, nutrients n color of the dish may differ.
Serve hot with rice………..

Fish Curry


Ingredients
Fish: 500gms (can u use any fish of ur choice)
Onion: 2 medium
Tomato: 1
Green Chilli: 2
Garcinia cambogia (kudampuli): 3 big pieces
Ginger paste: 1tsp
Garlic Paste: 1 tsp
Fenugreek (uluva): ¼ tsp
Turmeric powder: 1tbsp
Chilli powder: 2 tbsp
Coriander powder: 3 tbsp
Grated coconut: 1 ½ cup
Shallots: 4
Curry leaves: few
Coriander leaves chopped: few
Salt: needed
Oil: 4tbsp
Mustard seeds: ½ tsp
Method of Preparation
Heat 3 tbsp oil in apan, add fenugreek seeds, when it turns slight brown add chopped onion.
When it turns light brown color add ginger garlic paste, sauté for a while and add chopped tomato and green chilli.
When tomato gets cooked add turmeric powder, chilli powder and coriander powder.
Stir and add 3-4 cups water. Add salt.
Add washed kudampuli.
When it boils and the gravy comes to 1 ½ cups add cleaned and washed fish.
Meanwhile grind coconut to fine paste by adding shallots.
When fish is cooked add the grinded coconut paste.
When it starts to boil stir and switch off the flame.
Heat 1 tbsp oil, add mustard seeds, when it splutters add curry leaves.
Transfer this to prepared fish curry.
Add chopped coriander leaves and serve hot with rice, roti……

Almond Cookies (Eggless)



Ingredients
Wheat Flour: 1 cup
Sugar: ½ cup
Salt: needed
Almond: 1 cup
Butter: ¼ cup
Baking powder: ¼ tsp
Cardamom powder: ½ tsp
Milk: 3tbsp or as needed
Method of Preparation
Microwave or roast almond for 2 minutes.
When slightly cooled, blend it in a blender to a coarse powder.
In a bowl add wheat flour, almond powder, salt, sugar, baking powder and cardamom powder.
Then add the butter and milk, mix well to form a soft dough.
Take lemon sized balls out of it, place it between the palms and press it slightly. The cookies should be about ½ “thickness.
If needed u can place raisins on top of each cookies (this step is optional)
Place it in a greased baking tray about 1” apart.
Bake the cookies to about 15-20 minutes, or till it turns golden brown.

Minced Soya Chunks Masala


Ingredients
Soya Chunks: 1 cup
Onion: 1
Tomato: 2 big
Ginger chopped: 1 tbsp
Garlic chopped: 1 tbsp
Green chilli: 2
Curry leaves: few
Coriander leaves: few
Turmeric powder: ½ tsp
Chilli powder: 1 tbsp
Coriander powder: 1 tbsp
Garam masala: ½ tsp
Salt: needed
Oil: 3tbsp
Method of Preparation
Soak soya chunks in hot water for 20-30 minutes
Wash well and squeeze and keep aside.
Mince it by blending it in a blender and keep aside.
Heat oil in a pan, add chopped ginger and garlic. Stir for a minute.
Add chopped onion and green chilli.
When onion turns slight brown colour, add chopped tomato.
When tomato gets cooked; add garam masala, coriander powder, turmeric powder and chilli powder stir for a minute and add minced soya chunks.
Stir well, close with a lid. Simmer the flame. Water from soya chunks will arise. So don’t put in very low flame.
After 2-3 minutes open the lid, if it is too moist increase the flame a bit ant stir continuously till water from it evaporates.
Add curry leaves and coriander leaves and switch off the flame.

Spicy N Crunchy Chicken


Ingredients
Chicken: 1kg (preferably boneless cut into small pieces)
Chilli powder: 2tbsp
Turmeric Powder: 1tsp
Maida/wheat flour: 5-6tbsp
Egg: 1 (optional)
Bread Crumps: needed
Salt: needed
Oil: for deep frying
Method of Preparation
Wash and drain the chicken pieces.
In a bowl add chilli powder, turmeric powder, egg , maida and salt.
If needed you can sprinkle some water to make it a thick batter.
Add chicken pieces to this batter and mix well.
Marinate to about 1 hour.
In a bowl take the bread crumps, roll each chicken pieces one by one in bread crumps.
Deep fry the chicken pieces one by one till it is done.
Spicy n crunchy chicken is ready to serve.
