Lemon Cup Cakes


Ingredients
Plain Flour/ Maida: 1 cup
Baking Powder: ¾ tsp
Lemon Essence: 1tsp
Sunflower Oil/ any refined oil: ½ cup
Powdered Sugar: ¾ cup
Lemon Juice: 4tbsp or of 2lemon
Eggs: 2                            
Salt: pinch


Method Of Preparation
Sift all the dry ingredients together.
In a separate bowl add oil and sugar. Beat it.
Now add the eggs and beat again well.
Add the lemon juice together with the essence.
Now add flour little by little and mix well.
Line the muffin tray with muffin cups.        
Pour little batter till the cup is 3/4rth filled.
Preheat the oven and bake at 160 deg C to about 18-22 minutes or till done.

Oreo Sandwiched Cup Cakes


Ingredients
Maida: 1/2 cup
Egg: 4
Sugar: 5 tbsp
Baking Powder: 1/2 tsp
Refined oil: 3tbsp
Vanilla Essence: 3/4 tsp
Salt: a pinch
Oreo biscuits:as needed


Method Of Preparation
Make sure everything is at room temperature.
In a bowl add maida and baking powder and sieve it twice.
Take another bowl and add egg to the bowl.
Beat well with an electric beater till it becomes fluffy. Then add sugar and salt and beat well till it melts.
Then add vanilla essence and refined oil and beat it again.
Then add maida and fold it without lumps and deflating the batter.
Line the muffin tray with muffin cups.
Pour little batter and add one pair oreo and on top of the oreo add little more batter till the cup is 3/4rth filled.
Preheat the oven and bake at 160 deg C to about 18-22 minutes or till done.

Strawberry Cup Cakes With Icing


Ingredients
Cake
Maida: ¾ cup
Egg: 6
Sugar: 7 1/2 tbsp
Baking Powder: ¾ tsp
Strawberry Essence: 1 tsp
Red Colour:3/4 tsp
Salt: a pinch
Icing
Whip cream:1 Sachets
Chilled Milk: 1/4 cup
Vanila essence: 3/4tsp
Red and green color: as needed



Method Of Preparation
Cake
In a bowl add maida and baking powder and sieve it twice.
Take another bowl and add egg to the bowl.
Beat well with an electric beater till it becomes fluffy. Then add sugar and salt and beat well till it melts.
Then add vanilla essence and color and beat it again.
Then add maida and fold it without lumps and deflating the batter.
Line the muffin tray with muffin cups. Pour the batter to it.
Preheat the oven at 200 deg c and bake it at 160 deg C to about 18-25minutes or till done.
Cool the muffins on a wire rack
Icing
Meanwhile prepare the icing by beating whip cream powder with chilled milk and vanilla essence till it reach the peak. Divide into two portions and add the colors and beat again separately.

When the muffin cools well decorate the muffins with the prepared icing as per your desire.

Almond Cup Cake

Ingredients
Almonds: 1 cup
All purpose flour: ½ cup
Sugar: ½ cup
Oil: 1/3 cup
Egg: 2            
Almond Extract: 1tsp
Baking Powder: ½ tsp
Salt: ¼ tsp



Method Of Preparation
Toast the almonds in microwave for 2-3minutes.
Blend it a blender and make to fine powder.
Sift together flourAlmond flourSalt and Baking powder. In a mixing bowl add oil and sugar and beat with a hand blender until smooth. Add one egg at a time and beat well.  Mix in almond extract and add dry ingredients. Combine well. Pour or scoop the batter into the preset lined cupcake tin.  Preheat the oven and Bake for 20-22 minutes, until a toothpick comes out clean from the center. Remove from the pan and cool on a wire rack

Cup Cake Topped With Oreo



Ingredients
Refined oil: 5-7tbsp
Sugar: 3-4tbsp
Milk: ¼ cup
Vanilla essence: ¼ tsp
Salt: a pinch      
Baking Powder: ¾ tsp
Baking Soda: a pinch
Maida/plain flour: ¼ cup +1tbsp
Eggs: 3
Oreo Biscuits: as needed to top


Method Of Preparation
Make sure everything is at room temperature.
Powder the sugar.
In a bowl add refined oil. Then add sugar and beat till it gets mixed up.
Then add eggs one by one and beat well.
Then add the baking powder, baking soda and salt. Beat well.
Then add vanilla essence and milk to it.
Beat it and then add flour little by little and mix it well with a wooden spatula.
Preheat the oven at 2000 C.
Take muffin tray and line with the muffin cups. Then add single oreo cookies in each cup with the cream side up. Add the batter to it till the cup is ¾ th filled. Top each cup with half of one pair oreo. (This oreo biscuits will stay crunchy even after baking)
Bake in the preheated oven at 1700C, to about 25-28 minutes or till it is done.
