When I saw this Brinjal Fry in Aarathis blog, from that time I wanted to try it. At last yesterday I tried it out and my whole family loved it. Served as side dish with steamed rice. The outer was crisper and inner was soft. It was really too delicious. You can find step by step details in her blog. So here goes the recipe.
Ingredients
Brinjal/ Egg Plant: 6
Rice Flour: 4tbsp
Chilli Powder: 1 tsp
Coriander Powder: ½ tsp
Salt: needed
Oil: for shallow Fry
Method of Preparation
Wash and cut the brinjal into thin round slices.
In a plate, take rice flour, chilli powder, coriander powder and salt. Mix well.
Dip/ Roll/ coat each brinjal pieces, both sides in the rice flour mix.
Meanwhile heat oil in a pan, Shallow fry each brinjal pieces till both sides turns crispy and done.
