Cauliflower Grean peas Curry


Ingredients
Cauliflower florets: 1 ½ cup
Green peas: ½ cup
French beans chopped: ½ cup
Carrot chopped: ¼ cup
Onion: 1
Green chilli: 2
Ginger paste: 1tsp
Garlic paste: 1tsp
Fresh Coconut Milk: 1/2 cup (thick milk)
Salt: needed
Coconut oil: 2tbsp
shallots: 5
Curry leaves: few
Method of Preparation
Soak green peas for 4 hours.
In a pressure cooker add green peas and little water and cook till the green peas are done. (Do not overcook the peas)
Then open the cooker and add cauliflower, French beans, carrot, onion, green chilli, ginger garlic paste and salt.
If needed add some water and cook for another 1 whistle or can cook without putting the weight for 15 minutes.
When vegetables are cooked add coconut milk and switch off the flame.
Heat oil in a pan, add oil and chopped shallots, when it turns light brown color and add curry leaves.
Transfer this to the cooked curry.
Serve with roti or chappathi.


This curry/stew can be prepared by adding any vegetable together with this. Keralites mainly serve this with Appam, Idiyappam, Chappathi etc.

  12. Yummy looking curry! Cauliflower is one of my favorite vegetable. I never come out of vegetable market without buying a cauliflower! I will surely try this one.
