Banana Bread

 Nowadays I am trying to use wheat flour instead of All Purpose Flour in baking. What I noticed is the use of wheat flour tastes better than the APF and of course healthy too and in my most of the recipe I replace refined oil instead of butter. The bread was soft and really it tasted great.
Ingredients
Wheat Flour: 1 ¾ cups
Powdered sugar: 1cup
Baking Powder: 1tsp
Baking Soda: ¼ tsp
Salt: ¼ tsp
Eggs: 2
Refined oil: ½ cup
Cinnamon Powder: 1tbsp
Banana (chiquitta): 3

Method of Preparation

In a large bowl combine the wheat flour, sugar, baking powder, baking soda, salt, cinnamon. Set aside.
Mash the bananas (use ripe bananas)
In a medium-sized bowl combine the mashed bananas, eggs and oil.
With a wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky.
The consistency of batter is thick. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.)

Pour batter into greased baking pan.
Preheat the oven and bake at 1800C until bread is golden brown and a toothpick inserted in the center comes out clean, about 40 to 50 minutes.
Then remove the bread from the pan and place on a wire rack to cool and .
