Yellow Pumpkin Curry


Ingredients
Yellow Pumpkin Chopped: 3cups
Ginger: 1”piece
Green Chilli: 2
Curd/yogurt: ¾ cup
Mustard seeds: few
Dry red chilli: 3
Coconut Oil: 2tbsp
Curry leaves: few
Salt: needed
Method of Preparation
In a bowl add yellow pumpkin, salt and little water and cook till pumpkin is done.
Meanwhile blend yogurt by adding ginger and green chilli.
When pumpkin is cooked, switch off the flame and add the curd mix and stir well.
After stirring well switch on the flame, continue stirring and switch off the flame after a minute.
Heat oil in a pan, splutter mustard seeds and add dry chilli and curry leaves.
Transfer this to the prepared pumpkin.
Serve hot with rice.
